Count Your Many Blessings for a Happy Life-+ FAN Recipe for Blueberry/Peach Crisp!

This quilt was made by Jamie Morton who took my Asilomar story quilt class.
If YOU want to do a cow the pattern is in "Out of the Box with Easy Blocks " book by me and Mel McFarland. I am sitting on cases of what was left as it "just" went out of print. Forty some cows will be at the AQS show in Iowa and then later Houston is showing 30 different ones ...it is called "MOOSTON"
No one has done a cow called "ChiCOWgo" and no one has done MOO YORK Moo York.....hope you consider it.
There will be shows next year too. The list of wonderful cows just keeps growing! So creative and it brings many smiles....how creative are YOU?

The quilt above was done by Penny from Modesto who is a nurse. She met her husband in Vietnam when they were both nurses. They LOVE to dance and so this was her theme. Imagine leaving a quilt like this about who you were. It makes us smile when we see it as it is so happy, colorful and creative. This is the goal of those of us who want to tell people for years to come who we are and what is important to us.
My husband has terminal cancer and I am working on telling the happy times he and I have had building our lives for the past 44 years. Our friends paid for a trip to hawaii and we are going in two weeks. The neat thing is I am taking a Hawaiian background and I plan to put us on a surfboard..I am wearing a muumuu and he will have a wild Hawaiian shirt on.....I plan to see what else inspires us.
Mark had his last radiation and chemo today after 6 long weeks and so it will be a nice place to go and rest and get healthier with the smells the sun, the water and the slower life style....lovely and just what we need right now.
I am going to add more photos soon...my Grandkids just got here. Check in and see what else I add here. I have some more friends who have sent amazing story quilt photos plus samples from the self portrait class I just taught....so fun!
Count your blessings friends...it is healthy!

Molly my friend made this fabulous dessert when we went to Black Butte Rance...I cannot tell you how GOOD it is!
It is a recipe from Ina Garten who is Barefoot Contessa...I have ALL of her cookbooks! She is amazing and you will LOVE this recipe. These photos are of Molly's baking.

Peach and Blueberry Crumbles

Ingredients

For the fruit:

  • 2 pounds firm, ripe peaches (6 to 8 peaches)
  • 2 teaspoons grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 cup fresh blueberries (1/2 pint)

For the crumble:

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar, lightly packed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 pound (1 stick) cold unsalted butter, diced

Directions

Preheat the oven to 350 degrees F.
Immerse the peaches in boiling water for 30 seconds to 1 minute, until their skins peel off easily. Place them immediately in cold water. Peel the peaches, slice them into thick wedges, and place them in a large bowl. Add the lemon zest, lemon juice, granulated sugar, and flour. Toss well. Gently mix in the blueberries. Allow the mixture to sit for 5 minutes. Spoon the mixture into ramekins or custard cups.
For the topping, combine the flour, granulated sugar, brown sugar, salt, cinnamon, and the butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is the size of peas. Rub the mixture with your fingertips until it's in big crumbles, then sprinkle evenly over the fruit. Place the ramekins on a sheet pan lined with parchment paper and bake for 40 to 45 minutes, until the tops are browned and crisp and the juices are bubbly. Serve warm or at room temperature.
If you want to make these early, store the unbaked crumbles in the refrigerator and bake before dinner.

  9. I am re-posting this as I had a terrible time trying to get it to take yesterday! And I hate having to figure out the numbers and letters before posting. I can usually not even read them! Anyway, I know that Mary Lou is relieved that Mark's treatments are done. Now you can both relax and hopefully Mark will heal and feel better while enjoying Hawaii. You are so blessed to have good friends that are making the trip possible. And also reminisce on the 44+ years you have been together. You have so much to still be thankful for. And it figures, Mary Lou, that you will be appliqueing a quilt while you are there! And I totally love the Christmas tree quilt project. What a great idea for a new retreat headliner!
    God Bless,
    Kim
